Palouse Falls is the official waterfall of the state of Washington.  It's an incredible place where the Palouse River plunges 186' into an incredible desert canyon.  There are a number of great viewpoints of the falls.  The easiest one is just a short hop from the car.  If you're more energetic you can take a trail to the bottom or another, non-official trail to the top.  There are also some great views by just walking along the rim of the canyon from the parking lot.  The falls are located in a great state park kind of in the middle of nowhere.  It's a long drive, but Palouse Falls is worth the trip if you're anywhere in the general vicinity.  It's one of the best waterfalls in the NW.
